My Latke Recipe
It’s that time of year, and I’ll be making these tomorrow night.
Here’s the recipe I use (makes 5-6 pancakes):
2 cups graded potatoes
2 eggs (scrambled)
2 1/2 tablespoons of grated onions
1 1/4 tablespoons of matzoh meal
1 heaping tablespoon of flour
3/4 teaspoon of salt
pepper to taste
1/2 cup of peanut oil
